The fishing process is one of the keys to obtaining quality products. At mare-mar we pay maximum attention to this point of the production process.

The fish are slaughtered by means of immersion in seawater (cooled with ice) at approximately 1º C. Fish are cold-blooded animals, that is to say, their activity is determined by the temperature of the water that surrounds them.

The fish are carefully removed from the growing units. In order to package the fish as quickly as possible, we do our fishing in the middle of the night, hours before dawn. This operation is supervised by professionals with decades of traditional fishing experience.

 

When the fish are introduced into the cold water, they become drowsy in a few seconds and die quickly with the minimum amount of stress. This helps to keep their flesh firm and smooth and their characteristic colour and appearance remain the same as when they were alive.
