The fish are carefully removed from the growing
units. In order to package the fish as quickly
as possible, we do our fishing in the middle of
the night, hours before dawn. This operation is
supervised by professionals with decades of traditional
fishing experience.

When the fish are introduced into the cold
water, they become drowsy in a few seconds and
die quickly with the minimum amount of stress.
This helps to keep their flesh firm and smooth
and their characteristic colour and appearance
remain the same as when they were alive. |
